What other veggie can I substitute the eggplant for in ratatouille?

I’m not really a huge fan of eggplant and would love to make ratatouille, but eggplant seems to be the main vegetable in it. I’ve seen recipes that also have zucchini, tomato, and bell pepper. Any suggestions?

    zucchini, or cucumbers

    The zucchini is the best, but if you want another idea try yellow squash. It has the same consistency, with a slightly nuttier flavor.

    I agree with your comments about eggplant. I make a ratatouille with garlic, zucchini (or yellow or a combination) and tomato. I sometimes add chopped red pepper too. Fresh basil if I have it. I would not add green peppers because they are too bitter.

    any kind of squash, plus onion, garlic and the ingredients you mentioned,also mushrooms.
